Risotto

An all-in-one dish that you can add almost anything to, Risotto is satisfying and although time consuming to make, it is worth it for a meal that you can cook in one pan. Use short grain rice – special risotto rice is available in supermarkets.

Feeds a family of 4

1 medium onion

Chopped vegetables according to preference, eg carrot, pumpkin or butternut squash, mushrooms, courgettes, peppers, tomatoes, and garlic

1/2 tbsp olive oil

300g (10oz) rice

500ml (1pint) stock

Cooked meat or fish, chopped (optional)

Salt and pepper to season

Freshly chopped herbs of your choice

75g (2oz–3oz) parmesan cheese

30g (1oz) butter
